Chocolate Truffle Energy Bites

These Chocolate Truffle Energy Bites are rich, dark and decadent with pure ganache flavor. It’s a no bake treat for odd hours and perfect to satisfy sweet tooth in a healthier way.

We are chocolate lovers and my daughter would simply gorge on melted dark chocolate chips. Hence, I came up with this recipe simply to add a little more superfood in it and make it a healthier dessert or snack.

These chocolate truffles also work great as pre-work out snack. It also serves excellent in satisfying chocolate cravings on those gloomy days.

Ingredients for Chocolate Truffle Energy Bites

Dairy free chocolate Chips
Unsweetened cocoa powder
Unsweetened coconut milk
Hemp seeds
Chia seeds
Flaxmeal
Maple syrup
Almond butter
Sweetened coconut flakes

How to make Chocolate Truffle Energy Bites

Firstly, I melted the chocolate chips in the microwave for about 2 minutes.

Secondly, I stirred in cocoa powder.

Next, I poured some warm coconut milk and whipped it nicely.

Thereafter, I added almond butter, maple syrup, hemp seeds, chia seeds and flaxmeal. Then, I whipped it very nicely and let it rest in the refrigerator for 3 hours.

In the meanwhile, I toasted coconut flakes in a nonstick pan until it was golden in color and kept it aside.

Once, it was firm and was like a stiff batter I took about 1 tbsp of it and formed a round ball between my palms. I repeated this process for the entire batch.

Afterwards, I rolled chocolate truffle into the toasted coconut.

We enjoyed half of the batch immediately and the rest I refrigerated again.

Expert tips:

  • I used lighted and unsweetened coconut milk that comes in tetra pack or in carton so as to keep the calories in check.
  • Make sure you do not freeze it. Only refrigeration is required. Even if you keep it overnight in the fridge and you feel its too hard for you to form balls simply keep it at room temperature for 30 minutes. Then start rolling into balls.
  • If you do not have sweetened coconut flakes then simply combine unsweetened coconut flakes and powdered sugar. Then toast it. I have mentioned the details in the recipe card under notes.

These chocolate truffles can be refrigerated in an air tight container for about a month.

Are these healthy?
I have used tetra pack coconut milk and added the superfood seeds. I have used minimum sweetener just to make it kid friendly. You may skip maple syrup if you like the bitter sweet yet taste of chocolate. I used almond butter to give it a body which also adds some vitamins and omega3 to this dessert. Therefore, these energy bites are perfect pre-workout snack and a healthier way to satisfy the sweet cravings.

Do I bake them?
It’s a no bake chocolate delight that has a long shelf life and is super easy to make.

Instructions

  • In a microwavable bowl combine chocolate chips and melt it. (about 2 minutes).
  • Take it out and stir in cocoa powder until it form a thick melted chocolate.
  • Warm the milk for 30 seconds in microwave again and mix in the melted chocolate.
  • Now, add hemp seeds, chia seeds, flaxmeal, maple syrup and almond butter. Whip it up nicely. Cover the bowl with a thin film or food saver and let it rest in the refrigerator for about 3 hours.
  • In the meanwhile, heat a nonstick pan and saute coconut flakes for about 1-2 minutes at low-medium flame or until it starts to brown. Take it away from the flame and let it cool down.
  • Once, the chocolate firms up and take about 1 tbsp between palms and form a round shape. Roll it in the toasted coconut flakes and set it aside.
  • Repeat the above process for the rest of the chocolate truffle.
  • Enjoy immediately or refrigerate for about a month in an air tight container.

Notes

  • If you don’t have sweetened coconut flakes then you may use 1/3 cup unsweetened dry coconut flakes and mix about 4 tsp powdered sugar to it. Then, heat a nonstick pan and saute it for about 1-2 minutes or until brown.
  • I personally prefer almond butter but you may use any nut butter except peanut butter in this recipe since peanuts would overwhelm the taste of this recipe.
  • Do not use canned coconut milk so as to keep the nutritional value in check. I used the coconut milk that is available in tetra pack or in cartons.
  • This recipe yields 15 energy balls and the serving size is 1 energy ball per person.
