This creamy, garlicky and perfect tangy Vegan Tzatziki is finger licking delicious. Its easy, quick and a complete crowd pleaser along with being a versatile dip. Basically, I love Mediterranean food and Tzatziki sauce being my favorite, I used to miss it quite a bit. I decided to come up with oil free and vegan version of my favorite dip. Ingredients for Vegan Tzatziki English cucumber Silken tofu Vegan yogurt Garlic Dill Salt Black pepper Lemon juice How to make Vegan Tzatziki Firstly, I grated English Cucumber and squeezed it very nicely. Then, I kept it aside. Next, in a mixing bowl I combined all the ingredients (including grated cucumber) and whipped it very nicely with spatula mashing all the ingredients in it. Thereafter, I blended it smooth. (Do not over do, just pulsing is enough). Lastly, I spooned it out and enjoyed it with pita bread. Expert tips: It is important to mash all the ingredients in a bowl first and then blend it to get the thick and creamy

I made it a vegan and gluten free version of the traditional Indian recipe to suit to most types of diet. Indian cooking is quite regular at my home because my husband is totally into it. He has been craving for malai kofta for a while and even though I let him enjoy the vegetarian version I have been wanting to make a vegan version so that I could also enjoy it. It’s my childhood favorite and simply wanted the same old taste. At the same time I was being conscious of the calories and fat that I would consume. Therefore, I finally came up with this vegan version of Malai Kofta. It took me a while to bring those childhood comforting flavors but at last I nailed it. This thick and rich Vegan Caesar Dressing is absolutely oil free and nut free. It has a mild sweetness along with being salty and has a perfect tang to its taste. It’s easy to blend and quick to make. I like the fact that its very nutritious and yet low in calories and low in carbohydrate. Ingredients for Vegan Caesar Dressing Sunflower seeds Capers in salted brine Dijon mustard Soy sauce Maple syrup Lemon juice Salt Plant milk Garlic Crushed black pepper Nutritional yeast flakes How to make Vegan Caesar Dressing Firstly, I boiled some water and then let sunflower seeds rest in it for 2 minutes. Later I drained it. Secondly, I combined all the ingredients in a blender and blended it smooth.
